Healthy No-Bake Energy Balls
A healthy, easy snack for athletes is a must! My friend Shelly, a fellow CrossFitter, has a solution. Try these energy balls for yourself!
No-Bake Happy Healthy Energy Balls By. Shelly Berkoski from Shell Yeah Design
Ingredients:
½ cup Nut Butter of Choice (I used Peanut Butter)
⅓ cup Honey
Pinch of Salt
¾ cup Rolled Oats
¼ cup Ground Flaxseed
½ cup Coconut (+ optional more for topping)
2 Scoops Protein Powder (Vanilla or Unflavored)
2 tsp Vanilla Extract
2 tsp Cinnamon
¼ cup Mini Chocolate Chips (optional)
¼ cup Crushed Pecans
Directions:
- Start by mixing your nut butter, honey and salt together (microwave a bit if it’s hard to mix).
- Add the rest of the ingredients into the bowl and stir until combined.
- Refrigerate for 30 minutes or so, and then with your hands, roll them into little 1-1 ½ inch balls.
- You can dip in a little coconut if you would like.
- Store them in the refrigerator in an airtight container for up to 10 days. Or you can keep them in the freezer, and just grab a few when you need!
Makes 24-28 little happy balls!
Stats per ball: 85 calories, 5g Fat, 6g Carbs, 3g Sugar, 5g Protein
